I'm so pleased I'm on track in two ways. 1. When I post this recipe I'll be 1/52nd of the way through my resolution to make a new recipe every week this year. 2. I'm eating healthily (for at least one meal).
Toria picked a delectable looking salmon, with what was supposed to be peach salsa from ambitiouskitchen.com. Tragically peaches are rarely good in Minnesota, and especially bad in January, so we opted for a mango which was just perfectly nice. Toria also doesn't appreciate heat of the spicy kind so we tamed it down from the original. Here's what Toria did, and how it looked.
Marinated salmon in a mixture of avocado oil, soy sauce, balsamic vinegar, honey, garlic, and ginger.
Cooked salmon at 400 degrees until flakey.
Prepared mango 🥭 salsa--avocado, mango, red onion, cilantro, lime, salt and pepper, combined.
Served with rice.
Toria gives it a 6 stars (out of 10), citing the need for more salt, and wondering about a better use of sauce.
I agree with the 6/10 score, the need for more salt, and explain that she should have asked me--I knew from an NPR radio show years ago that marinade's effectiveness is a myth, and that energy is better put into sauce in the first place.
Other than that fish was nice and flakey, flavors were good, but we doubt this recipe will become a staple due to the work involved for less than mind-bending delectability.
