Week 4, Recipe 4: Lemon Garlic Shrimp with Spinach


I found this gem in the macrostax app I’m trying out. Didn’t intend to use it for one of THE recipes, but it turned out amazing so it would be a shame not to.  Here's how I did it.

Sautéed 1.5 pounds shrimp in a couple tablespoons olive oil with a clove of garlic, adding salt and pepper to taste.  (Ended up draining off some of the excess water on batch one, didn't need to the second time I made it—yes I’ve already made it twice!)

Added a package of fresh spinach, cooking just 'til starting to wilt.  I then sprinkled 1/2 cup parmesan cheese over it, and squeezed 1/2 lemon over all.

It was delicious and I couldn't believe how fast it was, how gourmet I felt, how much spinach disappeared into this, and what an awesome healthy meal option I now have. Giving  this one a 9/10
