Week 5, recipe 5: Zuppa Toscana

 I confess, this is one I have made before. My sister, Elise, got me an instant pot, and this was one of the first things I tried. The recipe I used was from Pinterest where there's a ton of Zuppa Toscana recipes, but all basically the same:

1. Saute ground sausage, onion, and garlic in olive oil. 

2. Add potatoes, chicken/vegetable stock, and seasonings

3. Pressure cook on high for 10 minutes, then quick release

4. Add cream and chopped kale

5. Serve!



The recipe made way too much for me, but this soup reheats really well. Given how easy this is, how much it makes, and how delicious it tastes, I'll definitely be making this one again!
