This week's recipe was one I found on Pinterest. It looked delicious, but I picked it mostly because it used up some ingredients I already had. :)
I used Golden Yukon potatoes, sliced them into 3/4 inch slices, brushed them with olive oil, salt, and pepper, then baked them for 25 minutes. While waiting, I cooked and crumbled bacon, then used the bacon grease to brush the potato slices one more time before baking for an additional 10 minutes. When the potatoes were done, I sprinkled cheese and bacon over the top and put them in the oven one more time to melt the cheese.
They were served with sour cream, and I realized quickly I hadn't salted them enough. With proper seasoning, they were quite good; they really tasted just how baked potatoes usually do. I rank them a 7 because I like baked potatoes, but there wasn't really anything special about them. I would not make them again simply because I can make baked potatoes that taste the same with a lot less effort.
